Kilchoman Distillery, Kilchoman, Islay, Scotland
We're having another little Islay boy, Kilchoman distributed at the distillery a dozen years ago… not quite a whiskey, the Kilchoman New Spirit Bourbon Cask!
The Kilchoman Distillery was founded in June 2005 on the farmland of Rockside. It is the first new distillery to be built on the island of Islay in more than a century. More than a third of the barley used to make whiskey is grown on the farm and malted at the distillery. Its first barrel of whiskey was filled on December 15, 2005, and will be bottled in 2008. Kilchoman has bottled each year since the first distillation their new-spirit in order to launch their product and to reveal the whole evolution of their alcohol from distillation to bottling.
This small sample of new make was distilled on July 27, 2007 and bottled on February 26, 2008, at 50 PPM of peat. Alas a whiskey that you could only get at the time and only at the distillery shop via their website.
As the French architect said so well Auguste Ricard de Montferrand (1786-1858) said so well:

Very earthy and green peat, almost like Ardbeg. This peat does a good job of hiding the youth of the new make, you hardly perceive molasses. Red fruit, cream and roasted malt. Washed stone.
Beautiful oily texture, salted caramel and vanilla, malt, oily peat. Delicious. Almost no trace of the new make. Potential spices.
Peppery oak. Green peat, washed stone and wet earth. Nice length, with an oily impression in the mouth which lasts pleasantly.
Incredibly tasty. From their conception, Kilchoman's very first malts were intended for great things.
