We fuck another young boy from Islay, a Kilchoman distributed at the distillery a dozen years ago… not quite a whiskey yet, the Kilchoman New Spirit Bourbon Cask!

The Kilchoman Distillery was founded in June 2005 on the land of the Rockside Farm. It is the first new distillery to be built on the Isle of Islay in over a century. Over a third of the barley used in making whiskey is farm-grown and malted at the distillery. Its first barrel of whiskey was filled on December 15, 2005, and will be bottled in 2008. Kilchoman has bottled their new-spirit every year since the first distillation in order to launch their product and showcase the evolution of their alcohol from distillation to bottling.

This small sample of new make was distilled on July 27, 2007 and bottled on February 26, 2008, at 50 PPM peat. Alas a whiskey that you could only get at the time and only at the distillery shop via their website.

As the French architect said so well Auguste Ricard de Montferrand (1786-1858) said so well:

A mortally boring person is someone who deprives you of solitude without providing you with company ...

Nose:
Very earthy and green peat, almost like Ardbeg. This peat does a good job to hide the youth of the new make, we barely perceive molasses. Red fruits, cream and toasted malt. Stone washed.

Taste:
Beautiful oily texture, salted caramel and vanilla, malt, oily peat. Delicious. Almost no trace of the new make. Potential spices.

Finish:
Peppery oak. Green peat, washed stone and wet earth. Nice length, with an oily impression in the mouth which lasts pleasantly.

Balance:
Incredibly tasty. From their conception, Kilchoman's very first malts were intended for great things.

When visiting Québec Whisky by Andrew Ferguson, big boss of Kensington Wine Market in Calgary, we had the chance and the happiness to end the evening on the peaty notes of a Kilchoman 10 years Single Cask Release.

Bottled the August 21 2018 exclusively for the KWM, this malt was distilled on August 21 2008 and comes from the Cask 413 / 2008, having previously contained bourbon.

As the Duke of Savoy and Prince of Piedmont so well said, Victor Amadeus I of Savoy (1587-1637) said so well:

People rarely become famous for what they say until they are famous for what they did.

Nose:
Fruity and malty peat, raspberries, vanilla, caramel and oak. Smooth, like the best cask strengths, which hide their game until the last second.

Taste:
Sweet and honeyed, peaty and fruity at the same time. Orange, washed stone and sea salt. Spices and wood in power and elegance at a time.

Finish:
Finishes in an affirmed and pleasant way, in the respect of the aromas expressed previously.

Balance:
Again, Kilchoman barrels chosen by the KWM, an alliance that can hardly produce bad results.
